Caprese Salad

Caprese Salad is the perfect side dish next to a chicken breast, or other cooked meat.  It’s filling, but light enough to complete a dinner.  I love the taste of fresh basil, just love it!  This dressing is also a perfect reference for a go-to salad dressing.  You can make it ahead of time, and use it throughout the week.

I made a Tomato Mozzarella Pizza with Arugula and Prosciutto w/ Mama Mary’s individual Gluten Free Pizza Crusts.  Want to know the two things that pulled me to this pizza crust package in the grocery store?  1.  “Gluten Free”  2. “Bakes in 6 minutes!”  I saw a 10-minute gluten free dinner flash before my eyes and just had to purchase it.  Yes, it baked in about 6 minutes, but not to my liking.  But don’t worry, I have the tips and tricks to make it spectacular. Tomato Arugula Salad w/ Balsamic Vinaigrette Dressing

Have you ever been one of those people that grab a second plate or bowl for your SIDE salad?  That’s me, for sure, because 1. I like a lot of salad and 2. more importantly, and annoyingly…salads take up so much space and just expand everywhere.  This salad, I like to call compact.  You get tons of flavor, and nutrients, and only need to add a little bit on your dinner plate. It makes for a beautiful side dish.  This was our side with lettuce wrap burgers, and plantain fries.   Continue reading

Broccoli Slaw Skillet Spaghetti

This dish hits the spot if you are craving spaghetti, but don’t want to consume the heaviness from pasta.  I make spaghetti either with spaghetti squash or broccoli slaw.  Both are wonderful, but broccoli slaw takes about 5-7 minutes to cook, spaghetti squash takes about an hour.  I find myself making the broccoli slaw more.  Hmm, I wonder why?  Quick and easy is what I like, I know that concept will come in even more handy when I have children! Easy Baked Tomato Mozzarella Chicken

I needed a protein to go with my Supreme Pizza Quinoa Salad to complete the meal for dinner.  I would have normally just baked some chicken with some poultry seasoning, and call it good, but I wanted to get a bit more creative.  Especially since some creativity went into this quinoa business.  It’s nothing fancy, but definitely not boring chicken.

Easy Sweet Potato Nachos

These nachos turned out delicious!  They kind of just got thrown together, but sometimes those are the best meals and creations.
