Sauteed Brussels Sprouts with Bacon & Pine Nuts


All the ingredients are in the title!  How amazing is that.  It’s the small things that make me that happy.  It’s that simple, which makes it even more delicious.  A vegetable dish that tastes like candy, is what I like to call it.  I finally figured out the secret to cooking brussels sprouts that make them taste good, instead of rotten.  I couldn’t figure out why they always tasted bitter and just…off.  Want to know the secret?  K, here it is. Roasted Rainbow Potatoes


This potato dish makes a wonderful side dish to complete a fabulous dinner.  We ate these the other night with barbecue chicken and sautéed brussels sprouts.  There is plenty of flavor to enjoy them plain, but I dipped mine in ketchup, a craving I was having at the time.  No, not that kind of craving, unfortunately.  I made an egg scramble with the leftover potatoes and brussels sprouts the next morning.  Delicious!  I love getting creative with leftovers. Garlic Cauliflower Mash


I’ve made cauliflower “mashed potatoes” quite a few times but this recipe is by far my favorite, so I’m excited to share it.  In the past, my consistency was too runny, that it turns out looking like a cauliflower soup.  It still tastes delicious; however, you don’t get the same satisfaction as if you were eating mashed potatoes.  These actually have the same consistency as mashed potatoes and are just as tasty, if not tastier! Sweet Potato Rounds


There is seriously hundreds of ways you can make and prepare sweet potatoes, but this is by far one of my favorites.  It’s quick, easy, and doesn’t require a lot of prepping.  This dish makes a beautiful side, next to some meat and vegetables.  We ate this with a pork loin and some steamed carrots.

Sautéed Green Beans with Cranberries and Almonds


I just made this dish for Thanksgiving and loved it so much that I had to make it again.  I make green beans a lot as the vegetables for my meals, but I got a bit more creative on this one because it was Thanksgiving.  Adding cranberries to any dish makes it a Thanksgiving dish.  I should call these Thanksgiving Green Beans.  I add dried cranberries and almonds to a lot of food I eat Continue reading
