This potato dish makes a wonderful side dish to complete a fabulous dinner. We ate these the other night with barbecue chicken and sautéed brussels sprouts. There is plenty of flavor to enjoy them plain, but I dipped mine in ketchup, a craving I was having at the time. No, not that kind of craving, unfortunately. I’ve made cauliflower “mashed potatoes” quite a few times but this recipe is by far my favorite, so I’m excited to share it. In the past, my consistency was too runny, that it turns out looking like a cauliflower soup. It still tastes delicious; however, you don’t get the same satisfaction as if you were eating mashed potatoes. These actually have the same consistency as mashed potatoes and are just as tasty, if not tastier! Continue reading
There is seriously hundreds of ways you can make and prepare sweet potatoes, but this is by far one of my favorites. It’s quick, easy, and doesn’t require a lot of prepping. This dish makes a beautiful side, next to some meat and vegetables. We ate this with a pork loin and some steamed carrots.
I just made this dish for Thanksgiving and loved it so much that I had to make it again. I make green beans a lot as the vegetables for my meals, but I got a bit more creative on this one because it was Thanksgiving. Adding cranberries to any dish makes it a Thanksgiving dish.
