Protein Fuel Salad

Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Caprese Salad

DSC_0107

Caprese Salad is the perfect side dish next to a chicken breast, or other cooked meat.  It’s filling, but light enough to complete a dinner.  I love the taste of fresh basil, just love it!  This dressing is also a perfect reference for a go-to salad dressing.  You can make it ahead of time, and use it throughout the week.

Valentine’s Day is in 4 days!  I get excited for Valentine’s Day but I do find other celebrations more meaningful and more exciting Continue reading

Kale Chinese Chicken Salad

I had such a wonderful weekend!  I was extremely productive with the things that I’ve been wanting to do these next few months, like get pictures developed and organize them in photo albums, go through all of my New York scrap-booking type items that I saved from the trip, get some photos developed from the trip on canvas art, etc.  I completed organizing the photo albums, and starting the New York scrap-booking. Kale Cobb Salad

DSC_0119

I LOVE  Cobb salads, but I never order them at restaurants because they are always made with iceberg lettuce…and I don’t like iceberg lettuce.  What is the nutritional value in iceberg lettuce, anyway?  I feel like I’m not getting any good vegetable nutrients in the salad, because the Cobb is loaded with good stuff like eggs, avocado, and bacon, and no additional vegetables.  (Except for the few tomatoes) Subbing kale with iceberg lettuce Continue reading

Butternut Squash Kale Chicken Salad with Honey Balsamic Vinaigrette

PS Butternut Squash Kale Salad

Seriously, this is the longest name ever for a salad!  I wanted to make sure the important ingredients were in the title.  I even had to cut it back some.  Here’s what I wanted, Maple Roasted Butternut Squash Apple Kale Chicken Salad, with Honey Balsamic Vinaigrette.  Yep, a little much there.  I made this salad the other night for dinner, and my husband and I just couldn’t get enough of it! Sacramento: A Few Restaurant Reviews

Squeeze In (As seen on Diners Drive-Ins & Dive!)

Device Brewing Company (Kid Friendly, Dog Friendly, Outside Food Welcome)

Rubicon Brewing Company (Award-Winning Fine Ales)

Rick’s Dessert Diner (Sacramento’s Premier Dessert Destination)

I survived the 7 hour drive home from Sacramento without getting car sick!  It actually wasn’t that bad and could have been way worse.  We only hit traffic on our last stretch on the 5 freeway before heading onto the 126.  We also stopped by In N Out, which makes any car ride worth it.  We switched Pandora stations 1,000 times, Continue reading

Tomato Arugula Salad w/ Balsamic Vinaigrette Dressing

DSC_0096

Have you ever been one of those people that grab a second plate or bowl for your SIDE salad?  That’s me, for sure, because 1. I like a lot of salad and 2. more importantly, and annoyingly…salads take up so much space and just expand everywhere.  This salad, I like to call compact.  You get tons of flavor, and nutrients, and only need to add a little bit on your dinner plate. It makes for a beautiful side dish.  This was our side with lettuce wrap burgers, and plantain fries.   Continue reading
