Protein Fuel Salad

Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Taco Quinoa Bowl

This meal is satisfying in so many ways.  It’s tasty, light, but also filling…satisfying is just the perfect word!  This meal was inspired by Chipotle’s Burrito Bowl.  I even made a cilantro lime quinoa to match their cilantro lime white rice.  There’s always a difference between home cooked food and restaurant food.  Most restaurant food is full and salt and butter.  I never use that much salt and butter when I cook at home.  Even though I do enjoy Chipotle’s Burrito Bowl, I enjoyed mine better! 🙂 Continue reading

I had such a wonderful weekend!  I was extremely productive with the things that I’ve been wanting to do these next few months, like get pictures developed and organize them in photo albums, go through all of my New York scrap-booking type items that I saved from the trip, get some photos developed from the trip on canvas art, etc.  I completed organizing the photo albums, and starting the New York scrap-booking. Kale Cobb Salad

I LOVE  Cobb salads, but I never order them at restaurants because they are always made with iceberg lettuce…and I don’t like iceberg lettuce.  What is the nutritional value in iceberg lettuce, anyway?  I feel like I’m not getting any good vegetable nutrients in the salad, because the Cobb is loaded with good stuff like eggs, avocado, and bacon, and no additional vegetables.  (Except for the few tomatoes) Subbing kale with iceberg lettuce Continue reading

The Ultimate Grilled Cheese
