Can I just tell you that I just made these two nights in a row?!  Of course I can, and I just did…and I seriously did make them two nights in a row.  It was my husband’s request!  We had a few left over fritters from the previous night and some steak from even a different dinner that I didn’t want to go bad, so I just figured, left overs it is!  There weren’t enough vegetable fritters, so I just made more! Grilled Pepper Jack Pineapple Stuffed Anaheim Peppers

These peppers are just exactly what they say they are in the title.  Anaheim peppers stuffed with pepper jack cheese and crushed pineapple then grilled to perfection.  They are delicious.  It’s just the perfect flavor of sweet and spicy that will leave a wonderful taste in your mouth and wanting more.  It makes for a wonderful side when barbecuing, just like corn on the cob.  But, don’t not make the corn if you are making these.  It’s not a proper barbecue without corn on the cob! Turkey Stuffed Peppers

This dish is packed with meat and veggies, which is all great things.  Plus, it’s filling and satisfying, trust me.  It just can’t get any better than that for a dinner meal!  Especially for me, since it’s the evenings where I cheat the most with what I eat.  I seriously could eat so clean and great all day, and then come and have carbs in my dinner and a huge bowl of ice cream for dessert, even if I’m not hungry. Sausage Egg Muffins

I love egg muffins!  They are so easy to make and so convenient to store to have them on hand for breakfasts on-the -go.  I also love how they are already perfectly portioned out.  I eat a lot of eggs so just 1 muffin wouldn’t cut it for me.  I eat 2, and it’s perfect!  Don’t like an ingredient in these muffins?  No problem, just sub it with something else!  Bacon, ham, peppers, olives, spinach, artichoke hearts, green onion, really the list can go on forever.   Continue reading

Want to hear something really exciting?!  Trader Joe’s has fresh riced cauliflower in their refrigerated vegetable section.  It’s nothing but cauliflower.  You will be just as excited as I am if you have made fresh cauliflower rice.  Cauliflower rice is probably one of the most annoying things to make.  I don’t understand how cauliflower can manage to get all over the place while making it.
