I love egg muffins!  They are so easy to make and so convenient to store to have them on hand for breakfasts on-the -go.  I also love how they are already perfectly portioned out.  I eat a lot of eggs so just 1 muffin wouldn’t cut it for me.  I eat 2, and it’s perfect!  Don’t like an ingredient in these muffins?  No problem, just sub it with something else!  Bacon, ham, peppers, olives, spinach, artichoke hearts, green onion, really the list can go on forever.   Continue reading

A few quick and easy paleo to-go meals

I naturally eat about 75% paleo in my normal diet, but I decided to challenge myself and do strict paleo for 2 weeks.  I was feeling blah, just from the weight-gain I am getting from some medicine I am taking, so I wanted to just fill my body with good nutrients for the next couple weeks.  My goal in this was not to loose weight, but to feel good.   Continue reading

Paleo Espresso Bean Muffins

I decided to eat strictly paleo for the next 2 weeks, right before a bachelorette trip for a good friend of mine. Given that I’ll be in a bathing suit all day, and shorts or dresses in the evenings, I knew I would feel more comfortable and better about my self if I watch what I eat for the next few weeks. I eat 75% paleo naturally, so it isn’t too much of an adjustment in my diet. I just find it requires more food prepping, planning, and grocery shopping. Continue reading

Plantain Egg Salad

Egg salad tastes fantastic w/ plantain chips, even better than sticking it between 2 pieces of bread!  I cooked real plantains the other day for the first time, and ate them as chips, but their texture was more like fries.  Anyway, I had the idea of cutting them up and mushing them in my egg salad.  It worked perfectly, because the texture of the plantains just mixed well and blended in with the yolk and egg salad mixture.  Try it, you won’t be disappointed. Gluten Free PB2 Pancakes

I LOVE pancakes, but my stomach doesn’t always love pancakes, that’s for sure.  I came across this egg and banana pancake thing, and now am obsessed!  You can make it a lot of different ways with a lot of added ingredients, but the main base is always the egg and banana.  I found a combination that I like that is still quick to make (not a lot of ingredients and good for my working mornings) and enough nutritional ingredients to keep you satisfied and full until lunch.  I dream about these pancakes in the middle of the night…can it be morning so I can have my pancakes already?!  Oh, and coffee…can’t ever forget about the coffee.
