Turkey Stuffed Peppers

This dish is packed with meat and veggies, which is all great things.  Plus, it’s filling and satisfying, trust me.  It just can’t get any better than that for a dinner meal!  Especially for me, since it’s the evenings where I cheat the most with what I eat.  I seriously could eat so clean and great all day, and then come and have carbs in my dinner and a huge bowl of ice cream for dessert, even if I’m not hungry. Slow Cooker Candied Soy Shredded Pork

DSC_0422

Want to hear something really exciting?!  Trader Joe’s has fresh riced cauliflower in their refrigerated vegetable section.  It’s nothing but cauliflower.  You will be just as excited as I am if you have made fresh cauliflower rice.  Cauliflower rice is probably one of the most annoying things to make.  I don’t understand how cauliflower can manage to get all over the place while making it. Sausage Plantain Sandwiches

Happy Friday!  Happy beginning of Easter Weekend!  You guys, my husband and I get a whole weekend off together!  So excited!  I get so overwhelmed when weekends or days like this come up (they don’t happen too often) because I want to fill our time with something fun and eventful, so the pressures on!  If we are indecisive or just don’t know what to do, we will end up sitting around the house staring at each other trying to figure it out. Gluten Free Beef Stroganoff

DSC_0390

I was craving beef stroganoff the other day because I’m sure the last time I’ve had it was when I was a child, so I just had to make it!  My husband had memories of it too so he was so excited when I was making it.  We both agree it isn’t what we remember as kids, since I added things in it I know my parents didn’t, but the bold flavors were and that’s what’s important. Protein Fuel Salad

Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Layered Chicken Quinoa Dish

DSC_0353

I love how the food ingredients that are in the title of this dish aren’t even shown in this photo .  I promise there is quinoa and chicken below those cheesy vegetables.  There’s just something about an assortment of cooked vegetables that I love, especially when they’re smothered in melted cheese!  You can easily eliminate the melted cheese from this dish, that just goes directly on top, but I highly recommend not to.  Unless you’re allergic of course. Garlic Oil Penne Pasta with Sauteed Bacon Brussels Sprouts

DSC_0123

I was so in love with last weeks Sautéed Brussels Sprouts with Bacon & Pine Nuts (and I had leftover bacon), that I had to make it again!  The flavors were wonderful and I thought they would taste fantastic sautéed with some garlic olive oil and penne pasta.  It was fabulous!  Candy pasta, melt in your mouth, delicious.  OK, enough yummy food talk, because now I’m salivating and starving.
