Can I just tell you that I just made these two nights in a row?!  Of course I can, and I just did…and I seriously did make them two nights in a row.  It was my husband’s request!  We had a few left over fritters from the previous night and some steak from even a different dinner that I didn’t want to go bad, so I just figured, left overs it is!  There weren’t enough vegetable fritters, so I just made more! Sausage Egg Muffins

I love egg muffins!  They are so easy to make and so convenient to store to have them on hand for breakfasts on-the -go.  I also love how they are already perfectly portioned out.  I eat a lot of eggs so just 1 muffin wouldn’t cut it for me.  I eat 2, and it’s perfect!  Don’t like an ingredient in these muffins?  No problem, just sub it with something else!  Bacon, ham, peppers, olives, spinach, artichoke hearts, green onion, really the list can go on forever.   Continue reading

Happy Friday!  Happy beginning of Easter Weekend!  You guys, my husband and I get a whole weekend off together!  So excited!  I get so overwhelmed when weekends or days like this come up (they don’t happen too often) because I want to fill our time with something fun and eventful, so the pressures on!  If we are indecisive or just don’t know what to do, we will end up sitting around the house staring at each other trying to figure it out. BBQ Chicken Lettuce Wraps

Happy hump day!  These lettuce wraps make me so happy!  This would be a great appetizer idea, a side dish for a potluck, lunch, a snack, really the ideas are endless.  One of the secrets I discovered to the perfect lettuce wrap is the lettuce.  Butter lettuce is the best because of it’s texture, shape, and flavor.  I used to use romaine, until I came across butter lettuce. Layered Chicken Quinoa Dish

I love how the food ingredients that are in the title of this dish aren’t even shown in this photo .  I promise there is quinoa and chicken below those cheesy vegetables.  There’s just something about an assortment of cooked vegetables that I love, especially when they’re smothered in melted cheese!  You can easily eliminate the melted cheese from this dish, that just goes directly on top, but I highly recommend not to.  Unless you’re allergic of course. Mediterranean Egg White Omelette
