Happy hump day!  These lettuce wraps make me so happy!  This would be a great appetizer idea, a side dish for a potluck, lunch, a snack, really the ideas are endless.  One of the secrets I discovered to the perfect lettuce wrap is the lettuce.  Butter lettuce is the best because of it’s texture, shape, and flavor.  I used to use romaine, until I came across butter lettuce. These eye catching Turkey Club Pinwheels are extremely easy to make with deli restaurant style flavor!  They would make a perfect appetizer or a great to-go lunch.  Sandwiches is one of my favorite foods.  I haven’t been as in to them lately because I eat mostly low carb and gluten-free, and I haven’t found a bread that’s gluten-free that I like.   Continue reading

Protein Fuel Salad

Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Layered Chicken Quinoa Dish

I love how the food ingredients that are in the title of this dish aren’t even shown in this photo .  I promise there is quinoa and chicken below those cheesy vegetables.  There’s just something about an assortment of cooked vegetables that I love, especially when they’re smothered in melted cheese!  You can easily eliminate the melted cheese from this dish, that just goes directly on top, but I highly recommend not to.  Unless you’re allergic of course. Cocoa Orange Slush

I have so many oranges I don’t know what to do with them.  I picked some off from dad’s orange tree and came home with a whole bag full.  Why I thought I needed so many oranges at one time, is beyond me but, I’m finding ways to make good use of them.  Chocolate and orange sounds like a weird combination, but it’s actually quite tasty.  I remember when Starbucks had an orange chocolate drink years ago.  I worked there at the time and I remember thinking it was the worst drink they created. Fresh Squeezed Orange Juice with KitchenAid Citrus Juicer Attachment

There’s nothing like a glass of fresh squeezed orange juice, especially when you actually picked the oranges off of an orange tree, instead of placing them in a plastic baggie and weighing them at the grocery store.  My husband drinks orange juice like kids drink milk.  Kids drink milk, right?  I did, like it was going out of style.  I drank so much milk when I was younger, I was given the nickname “Milk-Bucket” from my dad.  I actually never drink milk anymore…funny.
