Happy hump day!  These lettuce wraps make me so happy!  This would be a great appetizer idea, a side dish for a potluck, lunch, a snack, really the ideas are endless.  One of the secrets I discovered to the perfect lettuce wrap is the lettuce.  Butter lettuce is the best because of it’s texture, shape, and flavor.  I used to use romaine, until I came across butter lettuce. Protein Fuel Salad

Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Caprese Salad

Caprese Salad is the perfect side dish next to a chicken breast, or other cooked meat.  It’s filling, but light enough to complete a dinner.  I love the taste of fresh basil, just love it!  This dressing is also a perfect reference for a go-to salad dressing.  You can make it ahead of time, and use it throughout the week.

Sauteed Brussels Sprouts with Bacon & Pine Nuts

All the ingredients are in the title!  How amazing is that.  It’s the small things that make me that happy.  It’s that simple, which makes it even more delicious.  A vegetable dish that tastes like candy, is what I like to call it.  I finally figured out the secret to cooking brussels sprouts that make them taste good, instead of rotten.  I couldn’t figure out why they always tasted bitter and just…off.  Want to know the secret?  K, here it is.
