Protein Fuel Salad


Happy Friday!  Happy weekend!  Here’s to the freakin weekend.  Wow, I’m sure we can all agree that I’m excited for the weekend!  I LOVE this salad!  My husband and I both had this salad for dinner and both were full, so it’s a perfect well-balanced, protein-fueled meal.  I made double, so I can have leftover for lunches this weekend.  Yum!  Maybe that’s why I’m excited for the weekend. Layered Chicken Quinoa Dish


I love how the food ingredients that are in the title of this dish aren’t even shown in this photo .  I promise there is quinoa and chicken below those cheesy vegetables.  There’s just something about an assortment of cooked vegetables that I love, especially when they’re smothered in melted cheese!  You can easily eliminate the melted cheese from this dish, that just goes directly on top, but I highly recommend not to.  Unless you’re allergic of course. Garlic Oil Penne Pasta with Sauteed Bacon Brussels Sprouts


I was so in love with last weeks Sautéed Brussels Sprouts with Bacon & Pine Nuts (and I had leftover bacon), that I had to make it again!  The flavors were wonderful and I thought they would taste fantastic sautéed with some garlic olive oil and penne pasta.  It was fabulous!  Candy pasta, melt in your mouth, delicious.  OK, enough yummy food talk, because now I’m salivating and starving. Sauteed Brussels Sprouts with Bacon & Pine Nuts

Taco Quinoa Bowl


This meal is satisfying in so many ways.  It’s tasty, light, but also filling…satisfying is just the perfect word!  This meal was inspired by Chipotle’s Burrito Bowl.  I even made a cilantro lime quinoa to match their cilantro lime white rice.  There’s always a difference between home cooked food and restaurant food.  Most restaurant food is full and salt and butter.  I never use that much salt and butter when I cook at home.  Even though I do enjoy Chipotle’s Burrito Bowl, I enjoyed mine better! 🙂 Continue reading

Roasted Rainbow Potatoes


This potato dish makes a wonderful side dish to complete a fabulous dinner.  We ate these the other night with barbecue chicken and sautéed brussels sprouts.  There is plenty of flavor to enjoy them plain, but I dipped mine in ketchup, a craving I was having at the time.  No, not that kind of craving, unfortunately.  I made an egg scramble with the leftover potatoes and brussels sprouts the next morning.  Delicious!  I love getting creative with leftovers.
