I love egg muffins!  They are so easy to make and so convenient to store to have them on hand for breakfasts on-the -go.  I also love how they are already perfectly portioned out.  I eat a lot of eggs so just 1 muffin wouldn’t cut it for me.  I eat 2, and it’s perfect!  Don’t like an ingredient in these muffins?  No problem, just sub it with something else!  Bacon, ham, peppers, olives, spinach, artichoke hearts, green onion, really the list can go on forever.   Continue reading

Cocoa Orange Slush

I have so many oranges I don’t know what to do with them.  I picked some off from dad’s orange tree and came home with a whole bag full.  Why I thought I needed so many oranges at one time, is beyond me but, I’m finding ways to make good use of them.  Chocolate and orange sounds like a weird combination, but it’s actually quite tasty.  I remember when Starbucks had an orange chocolate drink years ago.  I worked there at the time and I remember thinking it was the worst drink they created. Fresh Squeezed Orange Juice with KitchenAid Citrus Juicer Attachment

There’s nothing like a glass of fresh squeezed orange juice, especially when you actually picked the oranges off of an orange tree, instead of placing them in a plastic baggie and weighing them at the grocery store.  My husband drinks orange juice like kids drink milk.  Kids drink milk, right?  I did, like it was going out of style.  I drank so much milk when I was younger, I was given the nickname “Milk-Bucket” from my dad.  I actually never drink milk anymore…funny. Coconut Chocolate Chip Banana Shake

This shake is a perfect night time treat, or add a little protein powder and drink it for breakfast on the go!  I was making meatloaf the other night and opened up a can of coconut milk, which the recipe called for.  I realized I accidentally opened up the coconut cream can I had in my cabinet on accident.  I didn’t want to just throw the can of cream away, so I set it aside in the fridge and brainstormed a concoction for later.  It’s really rich and creamy with coconut flavor.  Tasty!
