Slow Cooker Candied Soy Shredded Pork

Want to hear something really exciting?!  Trader Joe’s has fresh riced cauliflower in their refrigerated vegetable section.  It’s nothing but cauliflower.  You will be just as excited as I am if you have made fresh cauliflower rice.  Cauliflower rice is probably one of the most annoying things to make.  I don’t understand how cauliflower can manage to get all over the place while making it.  Thank you Trader Joe’s for making my life a little bit easier!  I tried it out for the first time with this meal, and it tasted great!  I sauteed the cauliflower rice in some olive oil, garlic, and a little bit of soy sauce.  It paired perfectly well with this shredded pork!

 

Slow Cooker Candied Soy Shredded Pork

what you need:  (serves 2-3)

  • 1 pound pork chuck
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 cup water
  • 1/4 cup brown sugar
  • 2 tablespoons raw honey
  • 1 tablespoon soy sauce
  • salt/pepper to taste

what you do:

  1. Heat olive oil and minced garlic in a large skillet over medium heat.  Add pork chuck to pan, brown each side (cooking 2-3 minuets per side).
  2. Heat 1 cup water in the microwave in a microwave safe dish, about 30 seconds – 1 minute until warm.  Stir in brown sugar, honey, and soy sauce.
  3. Place pork chucks in a crockpot.  Pour water mixture over the pork.
  4. Cook on low for 7 hours.
  5. Shred pork over your favorite rice, quinoa, cauliflower rice, etc.
