I had such a wonderful weekend! I was extremely productive with the things that I’ve been wanting to do these next few months, like get pictures developed and organize them in photo albums, go through all of my New York scrap-booking type items that I saved from the trip, get some photos developed from the trip on canvas art, etc. I completed organizing the photo albums, and starting the New York scrap-booking. I went to Michaels and got some cute scrap-booking items for the few pages that I want to make from the New York trip and I already have 5 pages complete! Just a few more to go! I really don’t enjoy scrap-booking, but I usually like what the finishing product looks like. It would take me thousands of years to finish a whole scrap booking album! So instead, I am just doing a few pages to add to our New York photo album. We have keepsakes from the trip, and I think it would be nice to have those in scrap-booking form with the photo album. Fun stuff! I’ll have to show you the final few scrap-booking pages once they are all finished!
We make this salad every year at our family reunion, without the chicken, as a side salad for our tri-tip dinner night. There is usually anywhere from 50-80 people, and everyone looks forward to this salad every year! You will never have leftovers!
Kale Chinese Chicken Salad
what you need: (serves 2 for dinner, 4-6 for side salad)
- 11 ounce kale lettuce
- 2 cups chicken, cooked and cubed
- 2 8 ounce cans mandarin oranges, drained
- 1 cup sliced almonds
- 1-1/2 cups Chow Mein noodles
- 3/4 red onion, sliced
- 1 cup Girard’s Chinese Chicken Salad Dressing
what you do:
- Add kale, chicken, onion, almonds, mandarin oranges, and noodles into a large mixing bowl. Stir ingredients.
- Add dressing, and toss salad.
- Transfer to a serving dish and enjoy!
