I know this salad doesn’t pair well with the current season were in, but I was really craving this particular dressing that I love, so I made the salad anyway. I’ll have more yummy holiday recipes to share later this week.
It’s Christmas week! I am just so excited for whats to come! My brother comes home from college today, it’s a 3 day work week, some family is coming from out of town for Christmas, were attending a few more holiday parties, and this week will be full of yummy food! Good company, visiting with family, and delicous food. It just can’t get any better than that.
I actually had to skip out on a Holiday party last night. I’ve been fighting this stupid cold, and it just won’t go away! I know that what my body needed was rest, so I did just that. I wanted to make sure I was energized for the rest of the wonderful week. I am still not 100%, but I am definitely feeling better.

Strawberry Quinoa Chicken Salad
what you need: (serves 2-4)
- 8 cups kale (or lettuce of choice)
- 2 cups chicken, cooked and cubed
- 2 cups quinoa, cooked
- 1/2 cup crumbled feta
- 1/4 cup candied walnuts
- 1/2 cup Trader Joe’s Cranberry, Walnut & Gorgonzola Salad Dressing (the best dressing)
what you do:
- Add all the ingredients in a large bowl. Mix well.
- Transfer to a serving bowl, and dish up!
