Tomato Arugula Salad w/ Balsamic Vinaigrette Dressing


Have you ever been one of those people that grab a second plate or bowl for your SIDE salad?  That’s me, for sure, because 1. I like a lot of salad and 2. more importantly, and annoyingly…salads take up so much space and just expand everywhere.  This salad, I like to call compact.  You get tons of flavor, and nutrients, and only need to add a little bit on your dinner plate. It makes for a beautiful side dish.  This was our side with lettuce wrap burgers, and plantain fries.  It was a perfect meal!

For the dressing:  Balsamic Vinaigrette

what you need:

  • 1/4 cup balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon black pepper

what you do:

  1. Mix all ingredients together!  A few options here… pour everything into a mason jar, and shake it!  Pour everything into a bowl and stir well.

For the salad:  Tomato Arugula Salad

what you need:

  • 11oz grape tomatoes, cut in half
  • 2-1/2 cups arugula

what you do:

  1. In a salad bowl, add tomatoes, arugula, and salad dressing.
  2. Toss the salad well!  Ready to serve!
