Cottage Cheese Peach Parfait

Parfaits are a perfect, nutritiously well-balanced breakfast and lunch option.  It’s also easy to eat on the go, for those rushed working mornings, and convenient and easy to pack for lunches.  I make mine in plastic to-go cups, with lids, or in mason jars, to take on the go.  Easy peasy, and delicious!  I make a lot of combinations of parfaits, but this particular one I threw together the other day for lunch knew it had to be one I had to share!  I wasn’t expecting it to taste so good, because I made it with cottage cheese instead of yogurt, since I ran out yogurt.  Well, it ended up tasting even better than eating it with yogurt!  Seriously, there is something about the sweetness of the peaches and saltiness from the cottage cheese that makes it the perfect pair.  I felt adventurous the other morning and made homemade coconut granola, which is the granola I used for this parfait.  Yum, yum, yum!

what you need:

  • 1/2 cup Coconut Granola
  • 1 cup Cottage Cheese
  • 1 peach, finely diced
  • 1 tablespoon honey

what you do:

  1. In your cup of choice layer the following ingredients in this order… (from bottom to top)
    • 1/2 cup cottage cheese
    • 1/2 diced peaches
    • 1/2 tablespoon honey
    • 1/4 cup coconut granola
    • 1/2 cup cottage cheese
    • 1/2 diced peaches
    • 1/2 tablespoon honey
    • 1/4 cup coconut granola
  2. Eat and enjoy!
