Loaded Rice Cake Snack


I used to get really bad headaches if I went more than 3 hours without eating. I would eat a snack baggie of wheat thins or something and then feel better. This all changed when I started changing my diet and lifestyle. About 5 years ago I was introduced to the paleo diet. I love good tasting food, so the paleo diet opened my eyes to what naturally good food tastes like. I learned how to cook on a paleo diet, and I lost 10 pounds. I am not strict paleo, because my body can handle dairy and wheat (wheat in moderation), and I enjoy the taste of dairy and wheat. So anyway, I still like to enjoy snacks, but instead of grabbing for a box of wheat thins, I find myself making something like this. It’s better tasting, actual real substance food, and satisfying.   Sometimes I will eat this for breakfast with some egg whites and vegetables. Delicious breakfast.

what you need:

  • 1 rice cake of choice (I like Lundberg’s Organic Wild Rice Cake)
  • ½ Tbsp nut butter of choice (I use almond butter)
  • ½ banana, thinly sliced
  • cinnamon
  • honey (optional) I use raw, natural honey

what you do:

  1. spread the nut butter on the rice cake
  2. sprinkle cinnamon and honey (optional) over the top of the nut butter
  3. add thinly sliced pieces of banana on top

Eat up!
