Easy Baked Tomato Mozzarella Chicken


I needed a protein to go with my Supreme Pizza Quinoa Salad to complete the meal for dinner.  I would have normally just baked some chicken with some poultry seasoning, and call it good, but I wanted to get a bit more creative.  Especially since some creativity went into this quinoa business.  It’s nothing fancy, but definitely not boring chicken.

What you need:

  • 2 boneless chicken breasts
  • 14.5 oz. can diced tomatoes
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • 1/2 tsp. thyme
  • 1/2 tsp. savory
  • 1/2 tsp. oregano
  • 1/4 tsp. red chili pepper
  • 1 cup shredded mozzarella cheese
  • salt
  • pepper

What you do:

  1. Preheat oven to 375 degrees
  2. Lay 2 chicken breasts in a baking dish, salt and pepper each side.
  3. In a large bowl, mix together, diced tomatoes, basil, rosemary, thyme, savory, oregano, red chili pepper, and mozzarella cheese.
  4. Pour ingredients from large bowl over the chicken.
  5. Cook for 45 min (until internal temperature reaches 165)
  6. Serve, and enjoy!
